Founded in Melbourne in 1993 by French-trained Master Baker Laurent Boillon, Laurent Boulangerie & Patisserie began as a single boutique cafe in South Yarra. As a pioneer of authentic stone-baked sourdough and traditional French leavening techniques, the brand successfully introduced European culinary traditions to the Australian market. Over the past three decades, this dedication to premium quality has fueled significant growth, expanding the footprint to include multiple thriving retail destinations alongside a successful high-volume wholesale operation.
Design Clarity was commissioned to modernize the brand’s physical identity. The core objective was to update the retail presence to suit contemporary commercial environments while carefully protecting the classic heritage, elegance, and French provenance that define the business.
The Eastland Shopping Centre location showcases this spatial evolution. The layout seamlessly integrates a premium internal dining room configured for 100 patrons with a licensed outdoor-style seating zone that interfaces directly with the passing foot traffic of the mall precinct. Following the successful delivery of this site, Design Clarity is continuing its partnership with the brand to roll out this elevated design framework across four additional locations.
